Finding a quick and easy meal for my daughter can be hard especially when she has an after school club as she usually has her dinner at around 4:30pm – 5pm. She gets out of school around 4:15 on a club night so we need something that is tasty but quick and something she will enjoy.
We were sent some vouchers to purchase Richmond NEW Mini Meatballs and to come up with some meal ideas using them.
Richmond Mini Meatballs are bite-sized pork meatballs and can be cooked in the oven in just 8 minutes or in the microwave in just 1 minute. They are perfect for when your children are super hungry and you need to feed them quickly.
I decided to make Quick and Easy Cheesy Pasta and Mini Meatballs for my #Hungry2Happy Challenge.
Ingredients per child:
- 5 Richmond Mini Meatballs
- 1 cup Pasta
- 1 cup Grated Cheese
I cooked the pasta on the hob and after about 5 minutes I popped the Richmond Mini Meatballs in the oven for 8 minutes. While they were both cooking I grated the cheese, any cheese is fine to use, we used mild cheddar but medium and mature cheddar’s are good too.
When I had finished grating the cheese I spread a thin layer over the whole of the plate. This was the base of our masterpiece.
Once the pasta and meatballs were cooked I added the pasta as hair and the 2 whole meatballs as eyes. I then cut the remaining 3 in half and made a nose and mouth.
Finally I added more grated cheese to the pasta so it melted.
My daughter added a bit of tomato ketchup on the eyes and mouth.
She seemed to really like this meal. She ate the lot!
Another meal idea we had was adding Richmond Mini Meatballs as a pizza topping to a plain cheese pizza or any pizza of your choosing.
